    Zac hooks up a small 20 watt solar panel in order to recharge some small medical batteries that might be later used for HAM radio. It works pretty good and its always a good idea to have more than one option to charge batteries with.

    We grew a LOT of Basil this year and we are saving as much as we can. Many of this savings we will give away as gifts to friends. We may even offer some of it on our website as well as seed for those who want it.

    Our favorite basil snack recipe right now on the homestead:
    One Triscuit cracker topped with some fresh cheese, one full basil leaf and a slice of garden grown tomato sprinkled with black pepper. YUM!

    We have a lot of cedar trees on the property and so we decided a year ago to build an arbor for the purpose of growing certain plants like the Achocha Cucumber. It really has become a focal point of the garden and adds a lot of character to the area.

    We have learned a lot about livestock over the last 2 years. We are still learning and making adjustments as we go. There are three things I would recommend for new livestock owners based on what we have learned so far. Cattle, sheep, goats, chickens and other farm animals can be a chore to deal with. But there are ways to start off right from the beginning.

    Who would have thought that plants can help preserve meat for long term storage? The colder temperatures of fall is when homesteaders start putting up their meat for the winter and leaner times of the year.

    Most meats you buy in the stores will contain nitrites from various sources. Some are chemically made and others are harvested minerals. Back in the middle ages, people discovered that plants are a great natural source for nitrites that can preserve meat. So celery is a great option we are going to use for this purpose.

    It's time this fall to harvest and put up meat for the winter and spring. One of the ways we preserve meat long term is to raw pack it in canning jars before we put them in the pressure canner. Today, everyone is busy helping Jaimie get some deer meat put up in the pantry.

    The fall cold is coming soon and so its time to pull up our sweet potatoes. We got a bigger crop this year and they will store well for eating during the leaner winter months.

    The Sweet Potato is one of the favorites around the homestead and Jaimie will have fun using these for some of our favorite meals in the months ahead on the homestead!

    It seems sometimes people think that homesteading is a vacation where you can sit back and just enjoy nature and see the pretty sites but not really do anything. I don't care if its a 1000 year old tree. It's a maple tree and it serves a purpose for my family. To ignore it would mean being a bad steward of the land.

    I'm not trying to cause controversy, I just want to point out some realities of what is coming for dōTERRA and other oil companies if they don't mobilize now and begin to fight back against our ELECTED government.

    dōTERRA and other companies need to FIGHT BACK against the FDA and its monopoly on health in this country. If dōTERRA and other companies FAIL to join together to form some sort of association where regular folks can join in this fight, the FDA will succeed in its intended goal of shutting down essential oil companies forever. Millions of people will support you dōTERRA and Young Living, only a joined effort between the many companies along with customers who enjoy the products, will secure your industry from federal shutdown.

    Making Venison Hard Salami The Old Fashioned Way

    I harvested a little 7 point buck the other day and decided to turn the whole thing into hard salami that we could keep and store without refrigeration. True hard salami will not need refrigeration and can hang for months before you eat it. The process is simple but for many of us who have no previous knowledge or experience in curing meats, the task can seem like a tough one.

    Ingredients: 4 Pound Batch
    ----------------------
    4 pounds of ground venison
    2.5 ounces of salt (4%)
    1 tablespoon of celery powder
    1 tablespoon of black pepper
    1 tablespoon of red pepper flakes
    1/2 cup of red wine (prefer CabSav, Melot, Pino)

    Anything else to flavor. Mix well and stuff.

    Today we are preparing Venison Capocollo to be preserved and hung for aging. First begins the two week long process of curing and aging the meat. It's going to sit in salt for 14 days before hung in the pantry to dry and age for 6 months.

    We are curing with:
    Celery powder (do this first)
    Salt Rub (course salt)
    Sugar

    After curing 14 days, rinse with water, dry. Next rinse with wine, coat lightly with sugar, all spice and hang to age for 6 months.

Canning is a relatively modern invention. People 200 years ago didn't do that. They preserved their meats by salt and natural nitrate cures. Enjoy the video!

    Our friend and neighbor got the idea to turn his backhoe into a woodsplitter by making a few adjustments to the stabilizer arm. It works great and it saved him a lot of money instead of buying an expensive woodsplitter at the store simply by using what he already had on hand. Enjoy the video!

    You can't just sit around during fall and winter and expect that when spring gets here that your garden is going to be ready to go for planting. There are things you need to do to get the ground ready with lots of nutrients that the plants will love. Every year your plants remove nutrients from the soil, its important to put some back!

    Seems to me that if you use that stove for any period of time, that plastic bucket would stank up your vittles.
    Maybe chisel off the bucket to eliminate that.
