    We visited another homestead called Shalom Acres and they make some great hard salami with all of the animals they raise. Grass fed beef, sheep and harvested deer. Amazing! Throw in some homemade wine and raw cheese and you have some wonderful fruits of labor.

    Stupid pack rat was eating down our plants in the greenhouse. But we got him. The tool I used is called a 110 conibear and you can find them online. They are very effective tools at taking down small pests.

    Every summer we see poisonous snakes and spiders on the homestead. These animals can be deadly and very harmful to adults and especially young children. We needed to have emergency kits on hand to be able to treat and deal with these situations should a bite ever happen.

    Copperhead and Rattlesnakes along with black widows and brown recluse are here in these mountains and we have to learn to deal with them and understand how to treat a poisonous bite.

    How To Beat The Zika Virus Off Grid

    The national news media is loaded with stories on how the zika virus is coming to North America. What can we do to protect ourselves and family from the Zika virus and other viruses like West Nile?

    The Zika virus disease is caused by a virus transmitted primarily by Aedes mosquitoes. People with Zika virus disease can have symptoms that can include mild fever, skin rash, conjunctivitis, muscle and joint pain, malaise or headache.

    We are choosing to employ a certain flying mammal on our homestead that will help us against these viruses. Bats can eat up to 600 mosquitoes an hour! If you can manage to have a family of bats living close by, you could really lower the risk of any disease carrying mosquitoes around your home.

    Come take a tour of our spring 2016 Garden! We are busy planting and getting our garden ready for spring. We have lots of our plants in the ground with more to come but we are in the heart of spring the garden is beginning to come alive.

    We use the back to eden garden method combined with lasagna layering with different composts and materials. We are big into putting rock dusts and manures in our garden each year and we never till our garden soil. We just layer the top and plant. Easy Peasy and we have amazing growth!

    Growing Passion Fruit In The Garden

    I have tried for the last 3 years to get passion fruit to come up in our garden. I tried seeds which is near impossible unless you have perfect conditions. I learned that the best way to grow passion fruit is to transplant existing roots of the plant and then wait. FINALLY we have liftoff!

    Passion Fruit (Passiflora incarnata) grows wild here in the ozarks of Missouri and Arkansas. It is sometimes called the MayPop. The fruit is delicious and amazing to taste. The leaves can also be made into a tea for those who have insomnia and suffer from light sleep.

    Bottling Wine with Italian Ferrari Corker

    On Season 2 Episode 2, we demonstrated us bottling up some of our wine and how much trouble it was to use the little handheld corker. There were a couple of floor corkers and we settled on the Italian Ferrari mostly because the reviews were so good online.

    If you like to make your own wine, this is definitely the corker you want. Even if you only make a few bottles a year. This italian corkers is so easy to use and gives such a good result that I don't know why you would use anything else.

    Foley Belsaw Saw Mill Update

    This is our M14 Foley Belsaw Saw Mill. The blade has a thin coat of rust because it hasn't been used in a couple of months. We are pouring a concrete base for the mill and will hopefully have it back in operation soon.

    This Foley Belsaw saw mill was made back in the 1940's and is PTO driven with our 50 HP Massey Ferguson tractor. The carriage of the mill is run on the hydraulics of the tractor as well and must be hooked up each time. We are going to use the mill to make lumber for the homestead and nearby friends as well as cut some of our cedar to sell on the open market.

    Season 3 is coming - An American Homestead

    Season 3 is ready to get underway. We have lots of amazing topics and projects to cover this next year on the homestead. We are building a more permanent outdoor kitchen. We are building a permanent saw mill so the homestead can make its own lumber for our own use and for sale. We have a new turkey coop that almost ready to house a new flock. Our first cash crop is finally going in the ground since we moved here. Plus so much more off grid goodies and projects to share with you including some other homesteading families that we get to visit along the way!

    Awesome Soil Amendments for the Garden
    An American Homestead

    Building a great garden starts with great soil. If you have boring soil, you will have a boring garden. The more life-giving nutrients that you put in your garden, the more productivity you will get back.

    We primarily use the back to eden and lasagna method for gardening adding layer upon layer of natural materials over the top of each other. Here are some of the materials we use: shredded leaves, grass clippings, wheat straw, wood chips, rice hulls, compost, equine and rabbit manures.

    We also add a few other amendments to give our garden maximum production. Azomite, Epsom Salts, Bat Guano, Rock Phosphate.

    The Battle For Your Garden

    Your garden is a battlefield and you the gardener are in a war. This is different for the hobby gardener who is just trying to grow a few plants. But if your family is relying on this produce as a primary food source, doing battle with the enemy means you need to win!

    We are in a constant struggle with groundhogs, packrats, moles, deer, aphids, potato beetles and other adversaries that would destroy and steal our food from the the garden. Our weapons of war can only be natural without harmful chemicals.

    Winning Blue Ribbons For Your County Fair

    These are exceptional items for your next county fair entry. We placed each of these in the last 2 county fairs and each won a blue ribbon in the "exotic" category. The reason these are winners is because they are very rare and not many people have heard of them before.

    Achocha Cucumber: Also called the fat baby or Bolivian cucumber. These get peoples attention because of the menacing spikes on the outside flesh of the cucumber. But they are quite soft and harmless and tasty to eat. Heavy producer.

    Popalo: This is a cilantro substitute. Long after your cilantro has bolted, this plant is growing tall and putting out tons of flavor that is very similar to cilantro. If you love cilantro, you will love this plant. Grows up to 7 feet tall and heavy producer.

    Amazingly Large Water Filter Test
    An American Homestead

    This water filter would be perfect for large groups of people during an emergency. Mission trips, missionaries overseas, EMS or Firefighters, 4H groups or even boy scout troops.

    I love testing out new water filters. I have been collecting water filters for the last couple of years. Clean water is so important for healthy living. During a disaster where a large group of people may need access to clean water, this might be the device that saves the day.

    Pulling and Inserting New Saw Teeth
    An American Homestead

    In order to get our mill running, we needed to get some new teeth installed and find a replacement shank that would fit our circular blade. That proved to a little difficult but we managed to find a new box of 100 teeth and a couple never before used shanks to insert into the blade.

    Now that I had the new teeth, I had no idea how to put them in. I was given a wrench to use and removing them wasn't that hard. I didn't find any directions or videos online on how to set new teeth on a circular saw. So I decided to make a short video of me pulling and inserting the new circular saw tooth bits in case anyone else ever wanted to know.

    The saw mill is a 1940's era Foley Belsaw Sawmill that is PTO tractor driven.

    In this episode, we visit Shalom Acres and help them butcher one of their grass fed steers. Butchering a cow by yourself can be a chore and it's good to have some help. It takes practice to process meat efficiently but anyone can learn and the savings is well worth the effort.
