    For one whole day - from the beef garum pastries being glazed at 6am to the last dish leaving the kitchen in the evening - Munchies got to be a fly on the wall at restaurant 108 in Copenhagen. Chef Kristian Baumann opened 108 this summer in partnership with Noma, the world-beating restaurant that forever changed dining in the Nordic region, so the spotlight has been intense.

    Even though 108 shares ideas and a fermentation lab with Noma, the restaurant is very much its own place: It doesn’t require a black Amex to eat here, it has an a la carte menu with generous sharing dishes, and a bustling café.

    We got to follow Kristian and his staff around the kitchen and dining room, we went to the organic farm where they source produce, and the sommelier took us on a wild boat ride to pick up wine supplies delivered from France by sea.

    In this video, Samantha and I cooked a Spaghetti Squash with Shrimp in an Alfredo Sauce. This was a recipe that she has cooked a few times and I was able to finally get the cooking recipe on camera. This is a easy cooking recipe. The Spaghetti Squash adds a really interesting flavor with a great nutritional value .

    In this video, Samantha and I decided to cook some Blackfin Tuna for dinner. I caught a BlackFin Tuna on a recent fishing trip and had some left over. These fish are a real delicacy on the Gulf Coast and especially around Pensacola, Florida . Here is the recipe we used for cooking the Black fin tuna.

    On the left coast Albacore is our Tuna of choice.
    That pic. shows the right way to prepare it.
    We cut the fillets 1 1/2 to 2 inches thick, use mayo mixed with Cajun spice & grill it for 2 min's a side.

    INGREDIENTS:
    4 x slices of Organic Sliced Bread
    3 eggs
    Bowl of plain flour (Use a bowl you would serve soup or pasta in so it is nice and wide)
    2 slices of Prosciutto di Parma
    Grilled Sweet Potatoes
    Grilled Zucchini
    100ml milk
    Salt & Pepper
    Buffalo Mozzarella or Fior di Latte
    Asiago Cheese
    Vegetable oil for frying

    METHOD:
    1. Cut the mozzarella and asiago cheese into slices (almost 1cm each in width).
    2. Quickly grill a few thin slices of sweet potatoes and zucchini.
    3. Crack 3 eggs into a bowl and whisk them together well.
    4. Add milk along with salt and pepper to the eggs and mix once again.
    5. Cut the crusts off the bread, being careful not to slice too much of the white part off along with it!
    6. Pour some oil into a fry pan and turn the stove up to a medium high heat.
    7. Layer 2 slices of mozzarella on top of a slice of bread.
    8. Layer 2 thin slices of Prosciutto di Parma inside your Italian Grilled Cheese Sandwich, add a slice of grilled sweet potato, 2 slices of grilled zucchini, 3 slices of asiago cheese then place...

    Chiacchiere di carnevale (also called Crostoli or Frappe) are Italian fried cookies known as Angel Wings thanks to their ribbon-like shape. These crispy strips of deep fried pasta dough are so light; you will find it hard to stop at one! Sprinkled with powdered sugar, chiaccchiere (crostoli) are traditionally enjoyed for Carnevale, a celebration held before lent - but in my opinion, they should be relished all year around!     CHIACCHIERE DI CARNEVALE

    Ingredients:
    500g plain flour
    1 egg yolk
    ½ glass sunflower oil
    1-1 ½ glasses of white wine
    Pinch of sugar
    Pinch of salt

    METHOD:
    1. To make your crostoli, pour 500g plain flour on to a board or breakfast bench.
    2. Make a well in the centre using your hands.
    3. Pour an egg yolk (only) into the well and mix using a fork.
    4. Add ½ glass of sunflower oil.
    5. Sprinkle in a pinch of sugar and then a pinch of salt, and mix well.
    6. Add up to 1 glass of white wine and begin to combine all of the ingredients using your hands.
    7. Slowly but surely knead the crostoli dough for at least 6-8 minutes or until it forms into a ball and has a soft, smooth consistency.
    8. If you are finding the dough dry and hard, add some more white wine.
    9. Once the ball of crostoli dough has formed, pat it down and leave it to rest underneath a large bowl so that no air gets inside.
    10. Clean up your board and add some plain flour on top so to help you work your dough into the shape you need.
    11. Remove the large bowl from covering the dough and cut a small piece from the end of the dough to start making the individual crostoli.
    12. Preparing your pasta machine on a thicker setting, run the dough through it between 3-4 times. Then gradually work your way down the settings, as the dough becomes thinner, until you have a strip of dough and it is thin (but not too thin!) and smooth.
    13. Sprinkle some flour onto your board and pass the strip lightly through it on both sides.
    14. Using the ravioli cutter, slice small rectangular strips and then pinch it in the middle using two fingers to create “bow” shaped crostoli.
    15. Heat up a good portion of olive oil in a small, deep pot.
    16. Add several crostoli into the pot and fry them for less than a minute.
    17. Turn each crostoli over using a slotted kitchen turner to make sure it has cooked through and once they have slightly browned in colour, transfer them onto a plate with paper towels.
    18. Let the towels absorb the oil.

    MINESTRONE SOUP

    INGREDIENTS:
    The following ingredients need to be chopped into small pieces:
    ½ onion
    2 x carrots
    2 x celery branches
    1 x sweet potato
    1 x zucchini

    1 small sized broccoli
    ½ cauliflower
    handful of fresh basil leaves
    1 x can of bean mix or fresh bortolli beans
    300g cut of chuck steak (or Osso Buco)
    1 x cube of vegetable stock, dissolved in 1/2L boiling water
    1 x can tomato puree (MUTTI “Polpa”)
    Block of parmigianno regianno cheese”
    Extra virgin olive oil
    Salt and Pepper

    UTENSILS:
    1 x large, deep non-stick pot
    Wooden spoon
    Chopping board
    Sharp, thick knife
    METHOD:
    1. Put the pot on to the stove at a medium heat without the lid. After 1 minute, add 4 tablespoons of extra virgin olive oil
    2. Then, add the chopped onion, carrots and celery, along with half a glass of water and combine with a wooden spoon
    3. Chop the chuck steak into small pieces and add this to the simmering vegetables. Cook for around 5 minutes, or until the meat starts to become nice and brown
    4. Next, chop the cauliflower and broccoli into small pieces and leave them to the side
    5. Add the finely chopped tomato “MUTTI Polpa” to the pot and stir. Let this simmer for a few minutes
    6. Add the cauliflower, broccoli, zucchini, sweet potato and beans to the pot and lastly, chop the bail leaves with your hands and add them in too!
    7. Next, pour in the vegetable stock so that it starts to get familiar with all the vegetables in the mix and add another 1.5 litres of room temperature water and stir everything together.
    8. If you have a fresh block of Parmigiano Reggiano, carefully slice of the skin and cut it into medium size pieces. I love adding this to the soup because it makes it even more salty and flavoursome (This ingredient is optional and although it can be eaten, it can be used just for the extra taste)
    9. Add salt and pepper to season and mix everything together really well and then leave the minestrone to cook for around 2 hours on a medium-low heat. This should be stirred well every half an hour.

    TIP: If you wish to add a pasta to the soup, my favourite is “Mezzi Ditali Rigato Pasta” and this can be cooked directly in the soup. My dry pasta of choice is DeCecco and it needs to be cooked for 12 minutes. Cooking this way will absorb more of the liquid and the result will be thick and rich.
    HOW TO SERVE
    1. Sprinkle some parmigiano cheese on top and serve with a couple of slices of crusty bread, freshly toasted in the oven or on the grill

    About 25 km from Central Bangkok is a place called Bangpoo (บางปู / สถานตากอากาศบางปู). It’s one of the closest places from Bangkok to the ocean. And although it’s not a swimming ocean, you can feed seagulls there and the best part of taking a day trip there is to eat some delicious seafood at the restaurant on the pier.

    So first off in this video, we drove down Sukhumvit towards Samut Prakan (สมุทรปราการ), which is the next southern province from Bangkok. The drive didn’t take long and we decided to stop off in Samut Prakan town to visit the seafood market. If you enjoy seafood, the Samut Prakan market is a great place to visit and look around. Just outside the market, we stopped to have a fresh squeezed juice. I tried an interesting juice combination of bitter melon and green apple. It was a little intense, but I enjoyed it.

    We continued on drive to Bangpoo (บางปู). Bangpoo (บางปู) is owned by the Thai Navy and it’s basically a little center where you can walk out of the pier and look at the ocean and feed the seagulls. Bangkok is not located right on the ocean, but it’s about 20 km or so from the mouth of the Gulf of Thailand. So taking a Bangkok day trip to Bangboo (บางปู) is one of the closest places you can get to the ocean from Bangkok.

    At Bangpoo (บางปู) you can buy some food to feed the seagulls, and many people do. Or you can just watch the seagulls and they gracefully soar over the pier and mangrove forests along the coastline.

    At the end of the pier is a Thai seafood restaurant that you’re not going to want to miss eating at. The restaurant is called Sala Sukjai Restaurant (ร้านศาลาสุขใจ), and it ha a pretty antique classic feel to it with a ballroom in the middle, and two wings of seating. The restaurant is open air so you get the sea breeze, and while you eat delicious Thai seafood, you can watch the seagulls and the view.

    Here are the Thai seafood dishes we ordered:

    1. Fried fishcakes (ทอดมันปลา) - The fish-cakes were excellent, with good texture and curry paste flavor.
    2. Deep fried barramundi fish (ปลากะพงทอดน้ำปลา) - The fried barramundi fish with fish sauce and green mango salad was delicious.
    3. Mussels baked in pot (หอยแมลงภู่อบ) - These weren’t exactly New Zealand mussels, but they were pretty good, and steamed in a pot with basil and lemongrass.
    4. Stir fried fern with oyster sauce (ผักกูดผัดน้ำมันหอย) - This is a wonderful vegetables, and at this seafood restaurant they just stir fried it with oyster sauce.
    5. Potaek seafood soup (โป๊ะแตก) - This was probably my favorite dish at Sala Sukjai Restaurant (ร้านศาลาสุขใจ), the soup was so pure and so sour.
    6. Shrimp with mung bean noodles (กุ้งอบวุ้นเส้น) - Not the best version I’ve ever had, but taste was good still.

    On this Bangkok day trip to Samut Prakan and Bangpoo (บางปู), the highlight was the seafood meal at Sala Sukjai Restaurant (ร้านศาลาสุขใจ).

    If you want to take a quick day trip to one of the closest places to see the ocean near Bangkok, this is a fun place to visit.

    Indian street food and Indian Food is something I've always loved to eat! So I flew to Delhi, India just for the food, and have been eating Indian street food and curry non stop. Old Delhi is a food lovers heaven! It’s been the best Street Food I've tasted in India! The Indian food is so good in Delhii! I've eaten street food in Chennai, street food in Hyderabad, Indian street food in Kerala, and street food in Mumbai, all of which has been amazing!

    The street food in Delhi was so mouthwatering and delicious. The restaurant food was also very nice and to die for! I had some amazing curries and Mughlai cuisine at Karim’s in Old Delhi.

    Here are the specific locations for the Indian street food and Indian restaurants in Delhi that I tried:

    In this Thai green curry recipe (แกงเขียวหวานไก่) I decided to record my mother in law, who is one of the best Thai home cooks I know. Somehow she remembers all the ingredients in each Thai dish all from her head and doesn’t use any measurements. So I filmed here, narrated this Thai green curry chicken recipe, and wrote down all the ingredients and amounts she added.

    Here are the Thai green curry ingredients you’ll need:

    For the green curry chicken:
    1 whole chicken - 1.4 kg. in total weight (ไก่บ้าน) - I think a free range chicken gives you the best Thai green curry taste
    2 cups of water to first boil the chicken
    green curry paste (เครื่องแกงเขียวหวาน)

    6 - 10 Thai eggplant (มะเขือเปราะ)
    6 - 10 stems of Thai sweet basil (โหระพา)
    2 red spur chilies
    20 kaffir lime leaves (ใบมะกรูด)

    For the green curry paste (เครื่องแกงเขียวหวาน)
    150 grams Thai green chilies (พริกขี้หนูเขียว)
    1 head garlic (กระเทียม)
    3 shallots - small shallots about 2 tbsp in total (หอมแดง)

    1 kaffir lime - just the peel (ผิวมะกรูด)
    2 stalks lemongrass (ตะไคร้)

    In order to make this Thai green curry recipe, you first prepare all your ingredients to pound. Then pound the green curry paste. This is the most time consuming part of making this recipe, but it’s well worth the effort to pound it by hand as all the oils and aromas will be released. It took me about 1.5 hours to pound the green curry paste.

    Next step is to clean and chop up your chicken. We used a whole free range chicken for this recipe, but you could also use already cut up chicken pieces.

    The final step in making this authentic Thai green curry recipe is to boil the chicken with the curry paste and water, then combine it with coconut cream and the eggplant.

    If you follow these steps and use all the Thai ingredients, you’ll have one of the best bowls of Thai green curry you’ll ever have!

    Gyoza with classic pork and cabbage are juicy and moist in the centre with a crisp and chewy wrapper. These Japanese Fried Dumplings are related to the Chinese dumplings but slightly more subtle in flavour and not as hard to make as you might think! The key is in quality ingredients – and the wrapping! But you’ll be forgiven if you can’t quite master the pleating technique!
    This gyoza recipe was prepared with my very good Japanese friends Mika and Yumi who explained that the Japanese Gyoza are best enjoyed with some cooked rice and traditional soup.

    INGREDIENTS FOR THE CHINESE DUMPLINGS
    1 x packet of dumpling wrappers (40-50 wrappers)
    500g ground pork shoulder/mince
    ½ medium head of Napa cabbage
    1 glass water
    1-2 bunches fresh garlic chives
    1 garlic clove
    1 small piece of ginger
    2 tablespoons of soy sauce
    2 tablespoons sesame oil
    2 tablespoons mirin (cooking sake)
    Small dish with water

    INGREDIENTS FOR THE DIPPING SAUCE:
    1/3 glass white vinegar
    Drizzle of soy sauce
    3-4 drops of La Yu (Chilli Oil)

    METHOD:
    1. To make the Japanese Gyoza, start by finely chopping the cabbage using a large, sharp knife.
    2. Add the cabbage to a bowl and sprinkle salt on top. Mix this through well and leave to the side for a few minutes.
    3. Finely chop the garlic chives and leave these to the side as well.
    4. Get an empty bowl and the bowl with your cabbage. Pick up portions of the cabbage using your hands and squeeze out the excess water, then transfer this into the empty bowl. Repeat until all of the cabbage is strained.
    5. In a large mixing bowl, add the pork mince, cabbage and garlic chives.
    6. Season the ingredients of your Japanese Gyoza by grating a garlic clove inside as well as a small pice of ginger.

    There are many floating markets you can visit when you’re in Thailand, and even there are some floating markets located right within Bangkok that are very nice (Khlong Lat Mayom is very nice in Bangkok: https://migrationology.com/best-float...).

    Then there are also many floating markets about a 1 or 1.5 hour drive from Bangkok in a province called Samut Songkhram. In Samut Songkhram there are a number of other famous floating markets. Damnoen Saduak is the most famous of all, and it’s very touristy and gets very packed on the weekend. Amphawa is another Thai floating market that’s big and busy. But I wanted to go to a quieter and more peaceful floating market, so we decided to go to Tha Kha Floating Market (ตลาดน้ำท่าคา), located very close to Amphawa.

    It was my first time to visit Tha Kha Floating Market (ตลาดน้ำท่าคา), and I was pleasantly surprised by how small, friendly, and local it was. There’s not a whole lot to do, but there are plenty of floating boats serving food and you can also buy lots of fresh ingredients which come from this area.

    Along with plenty of Thai food snacks I ate during this tour of Tha Kha Floating Market (ตลาดน้ำท่าคา), the best thing was the hoy tod (หอยทอด), a fried oyster omelet. There’s something about eating an oily fried oyster omelet when you go to a floating market - it’s kind of like going to a sports game and eating a hot dog - they just go so well together.

    I also enjoyed the fruits available at the market, especially starfruit, which was likely picked right off the tree of the lady who was selling it.

    When you’re in Thailand, if you want to go to a quiet and peaceful floating market that’s not overly busy and still remains quite local Tha Kha Floating Market (ตลาดน้ำท่าคา) is an amazing option.

    PAELLA RECIPE

    Ingredients:
    1 x Capsicum
    2 x Carrot
    1 x Onion
    Extra virgin olive oil
    500g chicken breast (diced)
    4-5L water
    3 x sachets of saffron powder (or threads)
    2kg rice
    200g peas
    1Kg Shelled mussels
    200g prawns
    12 scampi
    600g Calamari
    Sprinkle of sea salt
    Fresh parsley

    Utensils:
    1 x large, deep pan
    1 x large deep pot (for approx. 5L water)
    1 x sharp knife
    1 x wooden spoon
    1 x ladle

    Method:
    1. Boil 4-5L water in a large pot while you prepare the ingredients for the paella.
    2. Dice the carrot, capsicum and onion into small pieces.
    3. Prepare the calamari by cutting the calamari strips into cubes.
    4. Pour a generous drizzle of extra virgin olive oil into a large deep pan and put it on the stove at a medium-high heat to start the paella mixture.
    5. Add the capsicum, carrot and onion to the pan and stir. Leave to simmer until the vegetables begin to soften.
    6. Add the calamari pieces and simmer for around 10 minutes while stirring regularly.
    7. Once the water has started to heat up, add 2 x sachets of saffron powder to the large pot.
    8. Next for your paella, it’s time to add the diced chicken to the mix and stir using wooden spoon. This should also be left to cook for 5-10 minutes.
    9. Add the prawn and saffron broth using a large ladle and stir it through.
    10. Then, pour in the rice, stir once again, and add another 2 ladles of broth.
