    Nobody, and I mean nobody, likes to hear “I told you so” so I’m going to do my best to avoid uttering those four words. But some recent headlines leave me nodding my head and thinking that I did my best to warn you about something awhile ago. What am I talking about? Well while America was enamored with who really won the Oscar for “Best Picture” a little headline snuck by most people last week that will have a profound impact on how you order your next cheeseburger. Wendy’s fast food chain announced that they’ll be adding 1,000 automated kiosks at their restaurants around the country to help serve the customer better. That is at least the official company line, that this automated equipment is really about making your experience easier when you get a hankering for something fast and yummy. The reality is this is a direct response to the national push to force fast food restaurants to pay their employees $15 per hour.

    On July 22nd, 2015 I wrote a column about the “Fight for $15” and the unintended consequences this cause was going to have on people. To be exact I wrote this verbatim twenty months ago, “I don’t think for a minute the fast food industry is going to sit back and eat this increase. Corporations are corporations and bottom lines are bottom lines. I predict it won’t be long until you walk or drive up to a kiosk, tap a few buttons and order your own meal yourself completely eliminating the need for a counter person.” Look at that, it took less than two years for them to catch on to fiscal reality and make the move to touch screen ordering.

    They aren’t the first. I noticed just recently that my local Panera now offers the option to order your lunch without dealing directly with a human. In Panera’s case I think they are offering the service to cut down on lines when they hit rush hour but it has the same effect. And trust me if enough of us opt to use a computer screen rather than talk to a flesh and blood person then you’ll be seeing more machines and fewer people no matter where you eat.

    If you think the companies that are switching to kiosks are being heartless I’d remind you they are in business for one reason only; to make money. One article I read about Wendy’s said they were projecting a 2 to 3 percent growth in revenue in 2017 but a 4 percent increase in labor costs. You do the math. You can’t sustain a business when labor exceeds the pace of revenue.

    The third thing I predicted 20 months ago in this column were massive layoffs and reductions in hours. Suddenly no one will want to hand out 40 hour shifts if they are paying $15 per hour plus benefits. That is the next piece of this puzzle that will fall into place.

    I said it then and I’ll repeat it now. I’m all for people making more money but when you arbitrarily raise the minimum wage for certain groups, corporations will protect their bottom line and react swiftly and without mercy. They won’t lose a moment’s sleep firing half the staff and replacing them with machines.

    Someone right now reading this is thinking the solution is we should refuse to use the machines and demand a real person to take our order and ring us up. Good luck with that. If I told you 20 years ago that you’d be willing to go to a grocery store, ring up and bag your own food and then feed money into the machine before leaving with no assistance from anyone, you would have told me I was nuts. People adapt and so does big business.

    Chicken Noodles soup
    Serves two

    200g Vermicelli noodles
    Boiled chicken (previous recipe)
    2 Large tomato
    1 Green chilli
    Bunch of coriander
    Handful beansprouts
    2 Spring onions
    Mint to taste
    Fresh chicken stock
    Fish sauce

    boil chicken stock, add chopped tomato and bring to boil
    boil water and add noodles cook for 4-5mins keep stiring, once cooked, drain and wash with cold water, this removes starch and stops the noodles cooking
    chop spring onion
    slice chicken
    place chicken and spring onion & all other garnishes on top of noodles then pour over chicken stock soup
    add fish sauce to taste

    Southern Thai dry chili pork ribs curry (แกงคั่วพริกซี่โครงหมู) is a recipe that my Thai mother in law makes frequently for me in Thailand, and so today I’m exciting to share this authentic Thai recipe with you!

    This is a Thai curry recipe, and it really focuses on dry red chilies for much of the flavor, without using any coconut milk. It’s common in Thailand to make this recipe with pork ribs, or any other kind of meat, it also works well with chicken. This is a southern Thai curry that you’ll find eaten throughout Bangkok at southern Thai restaurants, and throughout the south of Thailand.

    Here are the ingredients you’ll need for this recipe:

    For the curry:
    1 kg. pork ribs, or meat of choice (ซี่โครงหมู)
    6 - 8 tbsp. curry paste - ingredients below (เครื่องแกงเผ็ด)
    10 kaffir lime leaves (ใบมะกรูด)
    2 - 4 cups of water (น้ำเปล่า) - start with 2 cups and add more as needed
    About 1 tsp. salt, or salt to taste (เกลือ)

    For the curry paste:
    50 grams Thai dry bird's eye chilies - that's about 1 big handful (พริกชี้ฟ้าแห้ง)
    7 cloves garlic (กระเทียม)
    3 shallots (หอมแดง)
    1 coriander root (รากผักชี)
    2 thumbs sized chunks of turmeric (ขมิ้น)
    1 stalk lemongrass (ตะไคร้)
    1 thumb sized chunk of old galangal (ข่า)
    1 tbsp. black peppercorns (พริกไทยดำ)
    1 tsp. cumin seeds (ยี่หร่า)
    1 tsp. coriander seeds (ลูกผักชี)
    1 tsp. salt (เกลือ)
    1.5 tbsp shrimp paste (กะปิ)

    The basic steps of making this southern Thai dry chili pork ribs curry (วิธีทำ แกงคั่วพริกซี่โครงหมู) is to first pound all the ingredients for the curry paste, then boil it with water together with the pork ribs. The majority of the work you have to do is in preparing the curry paste. Then it’s just a matter of boiling it with the meat until the meat is tender.

    On Day 4 of our Bhutan travel and food trip, we had an amazing burger and then watched a Bhutan football game.

    Coffee Culture - One of the best cafes in central Thimphu, Bhutan is called Coffee Culture, and along with coffee they serve some pretty good food. What I loved the most was their cheese filled momos.

    Cloud 9 Gourmet Burgers - One of the things that surprised me about Thimphu is how much international food and restaurants there are even for such a small town. Cloud 9 Gourmet Burgers specializes in burgers and I had a huge burger that was pretty impressive. It was awesome.

    By luck, Bhutan had a World Cup qualifying match, and so we had the honor to attend. It was amazing to see the energy and culture of attending a game in Bhutan.

There are so many different recipes in Italy and Italians who live in Italy haven't tried all of them yet. Next time you order a chicken pasta or alfredo pasta think twice. Don't waste your money for popular food but instead learn more about Italian culture and it's food. For Italians Food is more important then the bible.

    My two salmon recipes are not only easy to make, they’re good for you and bursting with flavour thanks to the perfectly balanced mix of fresh vegetables and herbs.

    SALMON IN PARCHMENT
    Light and delightful, this salmon recipe is a fillet cooked in parchment with asparagus, fennel and cherry tomatoes.

    Ingredients: (p/serve)
    Salmon fillet (skin on or off depending on your preference)
    2 x asparagus stalks
    Fennel
    Fennel leaves
    Cherry tomatoes
    Capers
    Lemon rind
    2 x thin slices of lemon
    Salt and Pepper
    Extra virgin olive oil
    Thyme

    Method:
    1. To prepare this salmon recipe, place a sheet of parchment foil on your working bench.
    2. Drizzle some extra virgin olive oil over the top of the foil.
    3. Cut up the asparagus stalks and fennel into short strips and the cherry tomatoes, in half.
    4. On one side of the foil, leaving room to curl up the sides later on, place the asparagus, fennel and cherry tomatoes on the parchment foil along with a small sprinkle of capers.
    5. Grate some fresh lemon rind over the top of the vegetables and add salt and pepper.
    6. Place the salmon fillet over the top and add a handful of fennel leaves on top along with some fresh thyme, another small sprinkle of salt and pepper and a little more rind.
    7. Place the two slices of lemon on top for the perfect finish.
    8. Fold the other half of the parchment foil over the top and seal all of the edges by curling them inward, making sure to leave no room for air to get inside.
    9. Place the parcels in the a pre-heated oven for 20 minutes at 180 degrees celcius.

    SALMON TARTS RECIPE
    Salmon tarts are pretty morsels of seafood and vegetable goodness! Smoked salmon wrapped in short crust pastry filled with cream cheese, sweet potato and zucchini are the perfect starter to kick off a delicious meal. You can also make a mini-version as a canape.

    Ingredients:
    Smoked Salmon
    Taleggio/Mascarpone/Philadelphia (your choice!)
    Sweet potato
    Zucchini
    Sheet of short crust pastry

    1. Cut a rectangular strip of shortcrust pastry, approx. 12cm wide.
    2. Spread your choice of cream cheese on top, leaving a boarder all the way around – make sure you don’t spread the cheese too thick!
    3. Cut the sweet potato and zucchini into round strips using a potato peeler and place them on the top section of your strip of pastry.
    4. Layer a few thin strips of salmon on top of the vegetables and cheese spread.
    5. Starting on one side, gently roll up the pastry keeping all of the delicious ingredients in place.
    6. Once you get to the end, stand the parcel up and place it onto a baking tray covered with baking paper.
    7. Add as many as you like to the tray. Pop them in the oven for 20 minutes at 180 C degrees.

    I went over to Biloxi Mississippi to meet and hang out with Russ Jones who runs the Youtube channel Smokey Ribs BBQ & Southern Cuisine. Russ is a great BBQ'er and seafood cook, and equally as good with southern comfort foods too. He smoked us up some pork ribs on his new Lonestar Grills smoker, and then steamed some hot cajun crawfish! They even had all the sides and fixins to go along with it. I filmed Russ as he showed how to steam crawfish with his own recipe and using the Cajun Rocket Pots. We both had a great time hangin with each other and I sure hope to make it back for some more of that awesome cooking!
