    It's been a while since I've uploaded a cooking video, so I thought I'd get started again by uploading a video of one of my favorite foods, Corn Fritters. My granny made them for me when I was a kid and eating them now brings back great memories of her. I hope you enjoy them as much as I do.

    Ingredients:

    2 cups - Fresh corn
    1 cup - All purpose flour
    2 teaspoons - Baking powder
    1 1/2 tablespoons - Melted butter
    1/2 teaspoon - Salt
    1 teaspoon - Sugar
    1 - Egg
    1/2 to 1 cup - Milk
    Oil to fry in

    The Butter Burger at Solly's Grille has been voted one of America's top burgers. This is my version of their Solly Cheeseburger. It was AWESOME!
    Stewed Onion Recipe:
    3 tbs olive oil
    2 medium sweet onions, diced.
    2 tbs unsalted butter
    1/2 cup dry white wine
    1 cup beef broth
    1 tsp pepper
    salt to taste
    The above recipe was created by George Motz of Burger Land. It looks darker than the original, so I'm thinking about substituting chicken broth next time.

    Chile Lime Sauce

    3 tablespoons sour cream
    3 tablespoons mayonnaise
    ½ teaspoon chile powder
    ½ teaspoon garlic powder
    ½ teaspoon cumin
    ¼ teaspoon ancho chile powder
    1 tablespoon lime juice, to taste
    2 tablespoons grated Parmesan, plus more for sprinkling


    Mix all the ingredients together in a small bowl. Spread generously over the grilled corn. Sprinkle with additional Parmesan cheese and serve immediately.

    I’ve cooked a lot of catfish and when it’s a good clean fish with a golden crisp crust- then there’s nothing better! In this video we’re showing y’all tips on how to buy a good white catfish along with how to create a crispy crust that will stick to that fish. Recipes and what we used in this video below…

    Crispy Fried Catfish

    Catfish Filets (this recipe works well for about 2-3 large filets)
    1 cup cornmeal
    1/3 cup all-purpose flour
    1 – ½ tablespoons Red River Ranch Original Seasoning (or all-purpose seasoning)
    1 tablespoon cornstarch
    1 teaspoon baking powder
    1 tablespoon buttermilk powder
    1 cup warm water
    Canola, peanut or other fry oil

    1. In a medium bowl combine the cornmeal, flour and seasoning. Set aside.
    2. In a small bowl, combine the cornstarch, baking powder, buttermilk and warm water.
    3. Cut the catfish filets into thirds. Dip in the wet mixture and then dredget through the flour mixtures. Repeat.
    4. Heat the oil to 350 degrees in a cast iron Dutch oven or deep fryer.
    5. Fry the catfish until golden brown and crust is crispy.
    6. Let cool on a paper towel or wire rack.


    Catfish Dipping Sauce

    2 tablespoons mayonnaise
    1 tablespoon honey
    ½ teaspoon liquid smoke

    In a small bowl, whisk all the ingredients until smooth. Serve with catfish.

    Seared Salmon Fillets with Lemon Butter Sauce Recipe

    INGREDIENTS

    1 Lb Salmon Fillets
    6 Tbs Fresh Lemon Juice
    3 Tbs + 2 Tsp Olive Oil
    4-5 Tbs Butter
    2 Tsp Minced Garlic
    1 Tbs Parsley Flakes
    2 Tsp Salt
    1 Tsp Black Pepper

    Salmon with Lemon Butter Sauce

    OMG!!!!! This dish is so light on the stomach and it’s finger licking good. What’s better than juicy salmon fillets, with crispy skin, topped with some tasty finger licking good lemon butter sauce?? This would give anyone with functioning taste buds a major foodgasm so be warned…. This dish is good enough to make you loose your mind. I have never felt so complete after eating a meal! Guys you have got to give this recipe a shot… I feel really bad for those who can’t eat fish or seafood… because they are missing out on what’s it’s like to be in heaven on earth hahaha. You’re going to love this. Check out the recipe below!

    Instructions

    1. To begin this recipe you’re going to get a big bowl of cool water. Add 1 tbs of salt to the water to create a salt water solution. Sit your frozen salmon in the salt water solution until it unthaws. Once your salmon unthaw, rinse them really well and pat both sides of the salmon dry with a paper towel.

    2. Next you’re going to rub both sides of the salmon with 2 tsp of olive oil. Afterwards, rub both sides of the salmon with the salt and pepper.

    3. Now you’re going to move over to the stove and place your skillet over high heat. We don’t want to slow cook our salmon! Cooking it quickly helps to retains it juiciness. Slow cooking the salmon will dry it out and fish cooks rather quickly anyway so it’s totally unnecessary to slow cook this.

    4. Add your salmon to the skillet meat side down.

    5. You’re only going to cook the salmon until all the meathas changed in color. The meat on the sides of the salmon will change from pink to a badge like color as you can see in the photos above. Another way to check for doneness is to stick a thermometer into the thickest part of the salmon. When the thermometer gives you an internal temperature of 140 your salmon is DONE! I cooked them for about 4 to 5 minutes on each side. The cooking time will vary slightly depending on how thick your salmon is.

    6. Once the salmon is done, sit it aside on a paper toweled plate to drain the excess oil. Rinse the remnants from out the skillet and place the skillet over Medium heat this time.

    7. Add your lemon juice, parsley flakes, minced garlic, and butter to the skillet. Let it all simmer for about 40 seconds to 1 minute. Make sure the butter is nearly frozen when you add it to the skillet. I like it frozen because it melts slower leaving you with a thicker sauce texture. After about 40 seconds to 1 minute cut the fire off. The heat from the skillet will finish melting the butter. Just stir the butter around the skillet until its fully melted, then pour the lemon butter sauce over the salmon fillets. Enjoy! I know I did!

    For this Tel Aviv, Israel, food tour, we hooked up with my friend David (https://www.instagram.com/the.hungry....) to eat some of the best food in Tel Aviv, including a few true gems of Israeli and Middle Eastern food.

    Our first stop was in Jaffa, the old area of Tel Aviv, just south of the main city. It’s an ancient Biblical city, and I was excited to visit. Located in Jaffa is Abu Hassan, one of the most legendary and standards of hummus in Tel Aviv.

    Abu Hassan - Located in a peaceful area of Jaffa, this restaurant is always packed and busy full of people hungry for hummus, ful, and musabaha. it’s truly a legendary place and the hummus was of the sticky and smooth variety. I think my favorite thing was the musabaha, like hummus, but with whole chickpeas. They also offer a mix of hummus, ful, and musabaha all in a single bowl which is excellent.
    Total price - 72 ILS ($20.95)

    Sabich Tchernichovsky - An Iraqi Jewish food in Israel, sabich is a pita filled with eggplant and hard boiled eggs, and a selection of salad and condiments. David says that there’s no doubt Sabich Tchernichovsky makes the best sabich in Israel, and I was very impressed. He assembled the pita so slowly and perfectly, adding layer upon layer of eggplant, egg, and salad. It was truly one of the best vegetarian (but with egg) sandwiches I’ve ever had.
    Price - 21 ILS ($5.87)

    Falafel Johnny Benin - Next to Sabich Tchernichovsky, is Falafel Johnny Benin, a legendary Tel Aviv falafel hole in the wall restaurant. I ordered a half of a falafel sandwich, with salad and tahini. It was delicious, and freshly cooked.
    Half falafel pita - 9 ILS ($2.51)

    Carmel Market - Carmel Market is one of the most well known of all open air flea markets in Tel Aviv. You’ll find everything there, including a nice food section.

    HaBasta Restaurant - Located on a side street of Carmel Market, is HaBasta, a gourmet market fresh restaurant. They served us some very fresh and interesting dishes. The crab was delicious, and the fried veal brain was amazing, but I especially loved the cherry salad.
    Total price - 400 ILS ($111.72)

    Pronto Restaurant - Owned by the renowned Chef David Frankel, Pronto is a refined Israeli Italian and Mediterranean restaurant. The food was extremely high quality, and the flavors were very subtle and delicious. We were planning to pay for our meal, but David knows the chef very well, and Chef David wouldn’t allow us to pay. Delicious high end gourmet food.

    Jasmino - This was probably my favorite food on this entire Israeli food tour of Tel Aviv, Jasmino, specializing in grilled meat pita. The owner, another extremely kind man, ordered me the sweetbreads pita, grilled thymus and bottom part of lamb throat glands, with salad and tahini. It was extraordinary. My kind of a place.
    Price - 28 ILS ($7.82)

    And that completed our Tel Aviv food tour!
