    Day 2 in Yunnan, China was one of the greatest days of Chinese food I’ve ever had. We started by visiting Weishan, Yunnan, China, an ancient village known for delicious noodles. Then we continued on to an ancient and well preserved Muslim village, and finally had an ethnic dinner back in Dali new town.

    Special thanks to Zouba Tours (http://www.zoubatours.com/) for arranging everything in this video. I paid for this tour (it’s not sponsored), but I think they did a great job, and I thoroughly enjoyed the food and the tour.

    The first bowl of noodles was spectacular, a seperate bowl of noodles and a dipping soup of chili oil and pork. It was the perfect way to start a cold day in Yunnan, China.
    Price - 11 RMB ($1.67) per bowl

    Next we tried a Chinese street food snack that’s popular in Yunnan. A rice sheet is first grilled, then on went some pickles, peanuts, and a bunch of spices, and finally a Chinese donut was filled on the inside.
    Price - 1 RMB ($0.15)

    Entire bowl one noodle - Yes, the entire bowl of noodle was actually just one single noodle. It was one of the most fascinating to watch bowls ever. There’s a pan of coiled dough, which she expertly adds and stretches out as she boils it. You noodle gets cooked then topped with some vegetables and pork. It’s amazing to watch being made, and tastes delicious too.
    Price - 8 RMB ($1.21)

    Donglianhua (东莲花) Village - This is a well preserved ancient Muslim village, and Luxi brought us to a friend who is an outstanding cook with a gorgeous Chinese courtyard. She cooked one of the most amazing Halal beef salads I’ve ever had, plus Chinese Muslim noodles. Watching her cook everything from scratch and then eating in the courtyard environment was truly spectacular.

    Total price - 120 RMB ($18.18)

    Jingpo Yan Han Ren Jia (景颇岩罕人家) - Finally for dinner we drove back to Dali new town and ate dinner at a Jingpo restaurant, which is food from the border near Myanmar. The food was ate was not Chinese food like you would normally think, but more similar to Thai / Burmese or with Southeast Asian spices and flavors. It was an amazing meal to finish a fantastic Chinese street food tour day.

    It's a Southern tradition to have black-eyed peas on New Year's Day to bring good luck in the year ahead. Instead of just eating a spoonful, try this recipe which puts a different spin on an ol' black-eyed pea and you just might think you're eating meat! Shan and I wish you many blessings in the new year.

    Poor Man's Sausage

    1, 15 oz. can black-eyed peas
    2/3 cup all-purpose flour
    1/2 yellow onion, diced
    1 egg, beaten
    1 tsp red pepper flakes
    1/2 tsp sage
    1/2 tsp celery salt
    1/2 tsp cumin
    1 tsp baking powder
    2 tsp Red River Ranch Mesquite (available https://kentrollins.com/shop-1/) or all-purpose seasoning, to taste
    2-3 tablespoons cooking oil

    1. In a small saucepan, bring the peas to a boil then simmer about 4-5 minutes, stirring occasionally. Drain.
    2. In a mixing bowl, combine the flour, onion, egg and seasonings.
    3. Stir in the peas and mash until smooth and combined.
    4. Flour your hands and pinch off about a heaping tablespoon size of the mixtures and form into balls. Press down to form a patty.
    5. Heat the cooking grease over medium heat. Fry the patties until golden brown. Serve warm or at room temp.

    Green Chile Stew is one of my favorite cold weather recipes! It's filling and got just enough bite to light up your tastebuds. If you're looking for a good stew recipe this one needs to be at the top of your list.

    Green Chile Pork Stew Recipe


    ¾ cup all-purpose flour
    2 tbsp Red River Ranch Mesquite (https://kentrollins.com/shop-1/) or your favorite all-purpose
    1/2 tsp cumin
    ½ tsp salt
    ½ tsp black pepper
    3 to 4 lbs pork stew meat (shoulder, roast, etc.), trimmed and chopped into bite-sized pieces
    ¼ - 1/3 cup cooking oil
    7 tomatillos, husks removed and cored
    ½ - 1 serrano pepper
    1 yellow onion, sliced
    2 garlic cloves, sliced
    1 tsp of dried cilantro
    1 dried guajillo pepper, diced
    3 ¼ cups chicken broth (divided)
    3 (4 oz) cans whole green chiles, chopped


    -In a bowl, combine the flour, mesquite or favorite seasoning, cumin, salt and pepper. Toss in the pork until well coated.

    -Add the oil to a cast iron skillet and warm over medium heat. Add the pork and cook until lightly browned, stirring occasionally. Remove from skillet and set aside.

    -Place the tomatillos on a baking sheet and bake at 400 degrees F for 15 – 18 minutes or until tender. Remove from oven and let cool slightly.

    -In a blender add the tomatillos, serrano pepper (to taste), onion, garlic, cilantro, guajillo pepper, and ¼ cup chicken broth. Blend until smooth.

    -In a stock pot, add the remaining 3 cups chicken broth, pork and green chiles. Stir in the tomatillo sauce. Bring to a boil over medium-high heat for 2 -3 minutes. Reduce the heat and simmer, covered, for 45 minutes – 1 hour or until pork is tender. Salt and pepper to taste.

    Charoen Chai Community (ชุมชนเจริญไชย เยาราช), Bangkok, Thailand.

    I’ve known Michael from Bangkok Vanguards (http://bangkokvanguards.com/) for a number of years, and he’s a great guy. So we met up to hang out, eat, and explore and talk about a little more serious subject - the endangered Charoen Chai Community (ชุมชนเจริญไชย เยาราช) in Bangkok’s Yaowarat, Chinatown.

    Before exploring the neighborhood though, we stopped of course to eat some nearby Thai street food.

    Jay Eng (ร้านเจ๊เอ็ง) - Kuay teow lawd boran (ก๋วยเตี๋ยวหลอดโบราณ) is what this famous street sells. It’s an ok dish, not my absolute favorite, but it’s not a common dish to find in Bangkok either - this old type of style - it’s well worth trying out. Their fried fish cakes (ทอดมันปลา) are awesome.
    Price - 35 THB ($1.07) per plate

    Satay (สะเต๊ะ) - Next just down the road, and it actually has the same owner, we had some pretty fantastic satay. I especially enjoyed the liver.
    Total price - 220 THB ($6.74)

    Charoen Chai Community (ชุมชนเจริญไชย เยาราช) - What we really came to explore was Bangkok’s Charoen Chai Community (ชุมชนเจริญไชย เยาราช). This community is threatened by development. Now, Michael and I both know how development is a good and necessary part of any city, however it’s also good to preserve amazing living pieces of history. This community is one of the last Thai Chinese communities in Bangkok that has remained almost the same for a hundred years.

    Khao Tom Jay Suay (ข้าวต้มเจ๊สวย) - For dinner we headed to one of the best Thai Chinese street food restaurant right across the street from the community - right next to the community. It had been a few years since I’d eaten there and the food was as good as I had remembered.

    Asian date mussels (หอยกะพงผัดต้นหอม)
    Stink beans with shrimp (ผัดเผ็ดสะตอกุ้ง)
    Daylilies with crispy pork (ผัดดอกไม้จีนสดหมูกรอบ)
    Silver barb, pickled mustard greens (ปลาตะเพียบต้มเกี่ยมฉ่าย)
    Soup with pickled plum (แกงจืดบ๋วยหมูสับ)

    Total price - 450 THB ($13.78)

    I always like to explore the Hotpot scene wherever I go, so in Saigon Vietnam, I went on a HOTPOT and BBQ tour ate at some local favorites.

    Location 1: Lau de 304
    This local hotpot place is awesome! The broth is DELICIOUS and the goat is not gamey at all. LOVED that goat leg as well.

    I was told that I HAD to try some water buffalo while in Vietnam. The meat was leaner than beef and not as flavorful. The broth I loved but the bbq was a bit underwhelming.

    Nonna Igea in action making one of her favorite pasta recipes: Pasta e fagioli. Pasta e fagioli (also known as Pasta and fazool or pasta and fasule) is an ancient pasta part of the "cucina povera". Pasta e fagioli has been around for decades and it's still a very popular dish in Italian households. Back in the old days, during WWII Pasta and fagioli was an everyday dish as it was easy and cheap to make. Beans were named "Poor Man's Meat" as they are full of proteins. This pasta is kind of a beans soup with pasta. The pasta nonna uses is a handmade pasta shape called "sagne" which is typical from the region of Abruzzo.
    Recreate my Italian Nonna Pasta e fagioli and have an amazing italian culinary experience.
