Moussaka is a scrumptious signature Greek dish that brings the flavours and traditions of the Mediterranean to your plate. With crispy strips of eggplant mixed with layers of soft, rosemary infused potato, smothered with rich lamb sauce and creamy béchamel, this moussaka will make your tastebuds crave for more with every mouthful.

With different variations of this dish being prepared around the world, my good friends (and twins!) Helena and Vicki taught me how to make this moussaka dish, just like their YAYA (their Nonna!) – and it tastes just like an old family recipe should – DIVINE!

MOUSSAKA RECIPE

Ingredients for Moussaka:
Extra virgin olive oil
1 x finely diced brown onion
450g lamb mince
Dried oregano
Cinnamon
Fresh parsley
Salt and Pepper
Italian tomato sauce (700ml)
2 x large eggplants

Ingredients for the Béchamel Sauce:
50g butter
5 tablespoons plain flour
Salt & Pepper
Four cups milk
150g grated parmesan cheese
2 x egg yolks

METHOD:
1. To make moussaka, heat up a deep frying pan and add a generous amount of extra virgin olive oil.
2. Then, add finely diced brown onion and stir well using a wooden spoon letting it sauté.
3. Mix through the lamb mince, with cinnamon, dried oregano and a sprinkle of salt and pepper.
4. Break down the mince, mixing through all of the ingredients so they infuse the meat and it cooks through for the moussaka really well.
5. Leave the sauce to simmer for up to 30 minutes.
6. While the sauce for the moussaka is simmering, slice the eggplant into circular strips, making each one around 1cm thick.
7. Lightly grease a pan with oil, and grill the eggplants until they begin to change colour and soften.
8. Thinly slice the potatoes and then boil them until they soften and leave them to the side to infuse with a few sprigs of rosemary.

Pad ped or pad phet (ผัดเผ็ด), is a Thai dish that’s known for being one of the spiciest Thai dishes - if you love to eat spicy food, this is a dish you should make, and you should eat. My mother in-law happens to love to cook (ผัดเผ็ด).

One day we went to the market and bought some wild water ducks, and she made Thai spicy duck stir fry recipe (ผัดเผ็ดนกเป็ดน้ำ nok bet nam pad ped), and I’m extremely excited to share the full authentic Thai recipe with you here today.

Ingredients you’ll need:

500 grams (1.10 lb.) of minced meat (นกเป็ดน้ำ) - Again, we used wild duck, but you can make this recipe with beef or chicken or even lamb
2 tbsp. oil (น้ำมัน) - for stir frying, I used sunflower oil
1/2 tbsp. cumin seeds or powder (ยี่หร่า)
1/2 tbsp. coriander seed or powder (เม็ดผักชี)
20 Thai chilies (พริกขี้หนู)
1 head garlic (กระเทียม)
5 - 6 tbsp. southern Thai curry paste (เครื่องแกงเผ็ดใต้) - recipe here: https://www.eatingthaifood.com/how-to...
2 - 3 thumb sized chunks of young galangal (ข่าอ่อน)
handful of tree basil (ใบยี่หร่า) - you can also substitute for holy basil or another peppery herb
handful of green peppercorns (พริกไทยอ่อน) - optional
15 kaffir lime leaves (ใบมะกรูด)
fish sauce to taste if needed (น้ำปลา)

The basic steps for making this spicy Thai stir fry recipe is to just separately prepare all the ingredients, then combine them altogether.

First prepare your minced meat, stir fry it dry and drain the oil, then set aside. Prepare all the chilies and garlic and spices.

My wife wanted a burger so I cooked her a moose burger and had a pan of fond that I thought would make a great start to a new smelt recipe, so I de-glazed the pan with courvoisier and added some worcestershire sauce with ground pepper. I also deep fried some parsnips along with sweet potato and toasted some almonds with asparagus. This is a little out of the ordinary but tasted delicious!

I normally eat Thai food when I’m in Bangkok, but every now and then, it’s good to switch things up and eat something different. On this particular day, I was hanging out with my buddy Dwight from BKKFatty (), and we were really craving burgers. So we decided to hit up the Daniel Thaiger street food truck that serves some of the best burgers in Bangkok.

The menu is short and concise, but you are free to mix and match whatever toppings or order however many patty’s in your burger that you like. I decided to order the Mr. Steve, and I couldn’t resist ordering an extra patty, so I got double meat.

One of the things that Daniel Thaiger emphasizes is that they always use fresh, never frozen beef, and make their own burger patties. It truly shows, because the meat is extremely fresh tasting, and incredibly juicy and fragrant. They serve an amazing burger that is truly one of the best Bangkok street food burgers you can eat in Bangkok. I enjoyed every bit to the last bit of juices in my handheld paper wrap.

Spanish Omelette – also known as a tortilla de patatas – is a signature egg dish which can be served warm or at room temperature and both are equally delicious. With the three key ingredients being potatoes, onion and eggs, the only thing left for discussion is how crispy you like your potatoes! This Spanish potato omelette is part of my international recipe collection and is made proudly by my good friend Juan who is a Spanish native. YUM.

Ingredients:
3 medium sized potatoes
5 eggs
1 onion
Extra virgin olive oil
Salt

Method:
1. To make the Spanish omelette, peel the three potatoes and then cut them in half, then into even quarters.
2. Slice the potatoes so that they are approx. 1cm thick. If they are too thin, they will over cook and if they are too thick, they will undercook, so this part is very important!
3. Put a medium size deep fry pan on the stove at a low heat. Add a generous serve of extra virgin olive oil and leave to warm up.
4. Once the oil is nice and warm, add the slice potatoes in and leave to simmer for up to 5 minutes.
5. Peel the onion and slice it into thin strips then add these to the pan also.
6. Leave the potato and onion to cook through until they start to soften.
7. In a separate mixing bowl, whisk 5 eggs really well.
8. Pour the egg mixture into the pan and carefully move the mixture around using a spatula so that the egg gets through.
9. Keep moving the mixture for the Spanish omelette around sightly and ensure the edges are not stuck to the side of the pan by slightly sliding the spatula down and around he whole tortilla.
10. Leave it to cook for around 10 minutes.
11. Get a large, flat dish and lay it down over the top of the fry pan. Holding the fry pan in one hand and placing your hand flat on top of the bottom of the dish, flip the pan so the Spanish omelette falls on to the dish and the pan is empty.
12. Transfer the raw side if the Spanish omelette onto the pan and leave to cook for another 10 or so minutes (depending on your preference).

Fried Rice
Serves 1

1 egg
boiled rice
1 tsp soy sauce

crack one egg & whisk using folk until silky
add ½ tsp coconut oil to hot pan, pour in egg and stir in rice.
Lower heat and mix egg & rice until lumps have gone and mixed together well
Just before serving add soy sauce

Mark Wiens and Trevor James (The Food Ranger) - We had this idea to go on a spur of the moment road trip to Hua Hin (it’s about a 3 hour drive south of Bangkok) to eat a giant lobster. We set off in the middle of the morning and first stopped to explore a seafood market Mahachai (มหาชัย). For lunch we enjoyed some amazingly good Thai chicken massaman curry (มัสมั่นไก่).

We continued driving on to Hua Hin and arrived in the late afternoon, just in time for the Hua Hin walking street to open and the Thai seafood street food restaurant we were going to was just open as well.

Lung Ja Restaurant (ร้านลุงจ่า) is a seafood restaurant in Hua Hin that I had eaten at about 3 years before, but hadn’t been back. The owner remembered me (you can watch my previous video about the lobster here: https://www.youtube.com/watch?v=IQlWz...). It’s amazing to see the seafood they have - including King lobster, which I think is also rainbow lobster or spiny lobster. Additionally, they have some of the most massive tiger shrimp / prawns that you might ever seen in your entire life. Trevor James and I decided to order to giant lobsters (they were spiny rainbow lobsters) and two giant tiger prawns.

Watching them cook the lobsters was half of the fun, and it only built our hunger and anticipation. Eating lobster is one of the great culinary experiences you can ever have, and I love being able to eat lobster in Thailand at a non-fancy Thai street food restaurant where you are sitting open air to enjoy the atmosphere!

Eating 2.6 kg's of lobster and giant tiger prawns with Trevor was a food experience of a life time!

Serves 1

Chicken
pork
1 Spring onion
1 egg
boiled rice
1 tsp soy sauce

crack one egg & whisk using folk until silky
add ½ tsp coconut oil to hot pan, pour in egg and stir in rice.
Add in chicken & pork, fry well and cook through
Lower heat and mix well until lumps have then add chopped spring onions
Just before serving add soy sauce to taste

1 tsp soy sauce

Chicken vermicelli stir fry
Serve 2

200g vermicelli noodles
Chicken
Bowl beansprouts
2 sliced spring onion
Coconut oil
Soy sauce & pepper to taste

add 1 tsp coconut oil to hot wok, add spring onions & bean sprouts and stir well, add chicken & continue to cook. Add noodle gradually and keep stirring on medium heat. Light soy sauce & fish sauce to taste. Add garnish to taste

Ko Boo Rossing Noodle (ร้านโกบู้รสซิ่ง), is located in the Bang Kapi area of Bangkok, Khlong Chan (คลองจั่น) to be more exact. For Thai noodles lovers, it’s a famous little street food stall. They make mostly tom yum noodles, and you can choose your choice of egg noodles or rice noodles, and get them either with soup in the noodles, or get your noodles dry - depending on your tom yum noodle preference.

My wife ordered, sen lek tom yum pisayt kai 2 fawng (เส้นเล็กน้ำต้มยำพิเศษไข่2ฟอง), which is tom yum noodles with medium sized rice noodles, soup, extra special size, and 2 soft boiled eggs.

I ordered, bamee haeng tom yum pisayt kai 2 fawng (บะหมี่แห้งต้มยำพิเศษไข่2ฟอง), egg noodles, dry version with soup on the side, special bowl with 2 soft boiled eggs.

The noodles were seasoned well, but undoubtedly the highlight were the soft boiled eggs. That’s what this Bangkok street food noodle stall is all about.

Finally, we also got an order of moo satay (หมูสะเต๊ะ). The satay was alright, not spectacular, but worth trying when you eat here - something to go along with your bowl of Thai tom yum noodles.

For desserts, we walked down the market and bought some khanom buang (ขนมเบื้อง).
