Classic Fried Chicken
Cowboy Kent Rollins

Published on Feb 12, 2018
We've had a lot of request for a classic southern fried chicken recipe. We're showing you how to get a homemade- from scratch- fried chicken recipe start to finish!

Also great with our homemade gravy using the chicken drippings: https://youtu.be/TGkt9HRSvm0

Classic Fried Chicken Recipe

3.5 - 4 lb. whole chicken
2 1/4 cups butternilk
1 tablespoon baking powder
2 1/4 cups all-purpose flour
⅓ cup cornstarch
2 ½ tablespoons Red River Ranch Original Seasoning (kentrollins.com) or seasoned salt/favorite all-purpose seasoning
2 tablespoons ground black pepper
1 tablespoon poultry seasoning
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon cayenne pepper (optional)
2 teaspoons smoked paprika
1 teaspoon celery salt
2 teaspoons white pepper
Fry oil

-Cut the chicken up (as shown in video).

-In a large pan pour in the buttermilk and whisk in the baking powder. Add the chicken pieces and turn to generously coat. Cover and chill for at least one hour.

-Remove the chicken from the icebox about 30 minutes before frying and flip each piece over.

-Meanwhile, in a bowl combine the remaining spices.

-Add about 1 1/2 cups of the flour mixture into a plastic bag. Using a pair of tongs, remove a piece of chicken from the buttermilk and allow any excess buttermilk to drip off. Place the chicken in the bag and toss to generously coat. Place on a wire rack. Repeat with the remaining chicken, adding more flour mixture to the bag, as needed.

-Let the chicken set about 10 minutes before frying.

-Pour about 1-inch deep of oil into a cast iron skillet or Dutch oven (enough for the oil to reach about halfway up the chicken). Heat to 340-350 degrees F. over medium-high heat.

-Add the chicken to the skillet and cover with a lid. Cook for about 5 to 8 minutes or until a light golden brown. Remove the lid and flip each piece. Continue cooking (with no lid) an additional 5 - 7 minutes, rotating as needed, until golden brown and the internal temperature is 165 degrees. F.

-Allow to cool slightly on a wire rack. Serve warm.

Crock Pot Roast and Tips!
Cowboy Kent Rollins

Published on Feb 22, 2018
Recipe below for our easy Crock Pot Roast!

1 teaspoon garlic powder
1 teaspoon celery salt
1 teaspoon ground thyme
1 tablespoon smoked paprika
2 tablespoon coarse ground pepper
1 tablespoon seasoned salt
3.5 – 4 lb. bottom round roast
Lime juice
6 garlic cloves
2 cups beef broth
2 tablespoons canola oil
3 Russet Potatoes, sliced
6 -8 Carrots, sliced
2 yellow onions, sliced
2 bay leafs, crumbled
1 guajillo pepper, chopped

-In a small bowl, combine the seasonings and set aside.

-Rub lime juice on all sides of the roast. Generously sprinkle with the seasoning blend and rub to thoroughly coat all sides. With a small knife make small holes in roast and push garlic cloves into the meat, equally on both sides.

-Cover and place in icebox for at least 3 hours

-Remove the roast from the icebox about 30 minutes before cooking. Meanwhile, turn crockpot on high and add the beef broth to warm.

-Add about 2 tablespoons of the oil to a large cast iron skillet and heat over high. Sear the meat, rotating to brown all sides, roughly 3 minutes per side. Set aside.

-Add the bay leaves to the beef broth, then place the roast, fat side down, in the crock pot. Add the veggies to the sides and on top. Season the top of additional seasoning blend. Cover with the lid.

-Cook on high for about 6 hours or on low for about 8 hours. Depending on the size and thickness of the roast you may need to alter your cooking time. I checked the roast about 5 hours in and reduced it to low for an additional 1 – 1 ½ hours. Cook until the veggies are done and the meat is fork and pull apart tender.

Other types of roast to use: top or bottom round, chuck, arm. The size will vary your cooking time.

Chicken Fried Steak! (With Chuck Wagon Gravy!)
Cooking with Shotgun Red

Published on Feb 23, 2018
Chicken Fried Steak! (With Chuck Wagon Gravy!)

Start with 4 Cubed Steaks or Top Sirloin tenderized.

Make a wet and dry mix to dip and dredge your steaks in.

The wet mixture is 4 eggs, 1 tsp. of paprika, and 3/4 cup
of buttermilk, whisk well and pour in a shallow dish.

The dry mixture is 2 and 1/2 cups of all purpose flour
3 tbsp. of lemon pepper, 1 heaping tbsp. cornstarch.
1/8 cup of seasoning salt, mix everything together well.

Important!....
Sheila said it is OK with the salt I used in the video
recipe ... but I think it is a bit salty so to be safe...
(Only 1/8 cup of seasoning salt in the flour mixture)
You can always add salt to it later!

Dip the cubed steak in the egg mixture then in the flour,
then back in the egg mixture then back in the flour.
Then lay them on a rack for 15 minutes to soak up both!

Pour 1/2 inch deep lard, canola oil, or peanut oil, in a cast
iron pan and bring to 350 degrees. Cook steaks golden brown
on both sides and place them on a rack or paper towels.
(They both work just fine)

To make the gravy... drain the pan but keep the drippings.
Pour in 1/4 of a cup of bacon grease or you can use the oil
left from frying the steaks. Add an equal amount of the flour
you used earlier.

Cook the flour and grease on medium heat whisking constantly, after 2 minutes add 2 cups of warm whole milk a little at a time.
Simmer for 2 to 3 more minutes.
Once it thickens add 1/4 tsp salt and 1/2 tsp. black pepper.

Put your steaks in a baking dish and put them in the oven at
400 degrees for 5 minutes... plate it up and cover with gravy!

Sprinkle just a bit of black pepper on top!

Enjoy!

P.S. Sometimes they use real cheap cuts to make Cubed Steak
and it can be a bit chewy in spots... so if you want the best have them tenderize Top Sirloin for you or do it your self!

Sourdough Cinnamon Roll Apple Bake
Cowboy Kent Rollins

Published on Mar 1, 2018
For the crock jar and other items used in this video: https://www.amazon.com/shop/cowboyken...

Cowboy hashknife: https://kentrollins.com/shop-1/

Sourdough Cinnamon Roll Apple Bake

Apple Topping

3 Granny Smith apples, peeled and chopped
¾ cup water
1 stick butter
1 cup packed light brown sugar
3 shakes cinnamon
½ cup cold water
2 tablespoons cornstarch

Add the apples to a pot with the water and butter. Cook over medium-high heat until it comes to a boil. Reduce to a simmer and stir in the brown sugar and cinnamon and continue to cook until the apples are tender. In a small bowl, mix together the cold water and cornstarch. Add to the apples and bring to a boil. Stir until thickened.

Cinnamon Rolls
Click here for our sourdough starter recipe: https://kentrollins.com/?p=405

3 cups sourdough starter
1 pkg dry yeast
3 tablespoons sugar
1 teaspoon salt
2 tablespoons baking powder
3 tablespoons vegetable oil
2 ½ - 3 cups all-purpose flour
1 stick butter, melted (divided)
sugar, to taste
brown sugar, to taste
cinnamon, to taste

In a bowl, whisk together the starter, yeast and sugar. Let set a couple minutes. Whisk in the salt, baking powder and oil.

Stir in the flour until it is a soft dough, but not sticky to the touch. You may need to adjust the flour amount.

Generously flour the surface and knead the dough just slightly to remove any stickiness. Roll out to about ¼-inch thick rectangle. Pour ½ stick of the melted butter and spread on top. Sprinkle with sugar, brown sugar and cinnamon.

Starting at the long side, tightly roll up the dough. Cut into about 1-inch thick pieces.
Pour the remaining ½ stick of butter in the bottom of a 12-inch Dutch oven or 11x13-inch casserole dish. Evenly place the rolls on the bottom.

Pour the apple mixture over top. Cook with coals or in the oven at about 350 degrees for about 30 minutes in the middle rack or until golden brown.

Restaurant Rewind 4 - What Happened to Dog N Suds?
Restaurant Rewind

Published on Mar 4, 2018
Today in this episode, we are taking a closer look at - not a burger chain - but a dog chain - wait, what? A dog chain? Dog N Suds was a chain of drive in restaurants that reached over 600 units, and as the name suggests, the focus was dogs, hot dogs that is...and suds...or root beer.

For some, it’s been 40 years or more since they’ve tasted a coney dog or sipped a frosty mug of root beer. So if Dog N Suds had over 600 locations….where’d they all go? What did happen to Dog N Suds? We’ll try to answer those questions today as we revisit the early days of Dog N Suds, its rapid expansion and subsequent decline, leaving about a dozen left, mostly in the midwest. Wait, what? There are some left? Absolutely!, and in just a bit I will show you where you can find one.

Fiesta Breakfast Pizza with Sourdough Crust
Cowboy Kent Rollins

Published on Mar 5, 2018
Grab our easy quickset starter recipe here: https://kentrollins.com/?p=405
Cowboy Hash knife: https://kentrollins.com/shop-1/

Fiesta Breakfast Pizza with Sourdough Crust

4 eggs
1 tablespoon mayonnaise
salt and black pepper, to taste
1 (4 oz) can chopped green chiles
3 cups Sourdough Starter (link above)
1⁄4 cup olive oil
2 tablespoons sugar
2 teaspoons garlic salt
½ - 2 teaspoons baking powder
2 to 2 1⁄2 cups all-purpose flour
1/3 cup ranch dressing or to taste
1/3 cup refried beans, or to taste
1 – 2 cups shredded cheese

- In a medium bowl, whisk together the eggs, mayonnaise, salt, pepper and green chiles. Set aside.

- In a large bowl, whisk together the sourdough starter, olive oil, sugar, garlic salt, and your desired about of baking powder, depending on how thick you like your crust.

- Slowly stir in enough flour to form a soft dough, adjust amount as needed. Turn the dough out onto a floured surface. Lightly work the dough with the flour until all the stickiness is gone.

- Roll the dough out to desired thickness. Place in a greased Dutch oven or baking surface. Be sure to create a slight lip around the edge to hold in the toppings.

- Spread an even layer of the ranch followed by the beans on the crust. Warm the beans slightly for easier spreading.

-Pour the egg mixture on top. Top with cheese. Bake with coals or in the oven at 375 degree for about 20 – 30 minutes or until crust is browned on the bottom and eggs are cooked through.

Tip: feel free to adjust the ingredient amounts to suit the size of your pizza. We made a 12” crust with this recipe.

Cheesy Sourdough Onion Rings
Cowboy Kent Rollins

Published on Mar 8, 2018
Grab our quick set sourdough starter recipe here: https://kentrollins.com/?p=405

Cheesy Sourdough Onion Rings

1 large yellow onion, cut into rings
Sliced cheese (we used Mozarella and Pepper Jack), cut into strips the width of the onion rings
2 cups all-purpose flour
2 tablespoons cornstarch
1 teaspoon ground mustard
1 teaspoon garlic powder
1 teaspoon smoked paprika
4 tablespoons Red River Ranch Original ¬(https://kentrollins.com/shop-1/) or all-purpose seasoning of your choice, to taste
2 cups Sourdough starter (link above)
2 cups Panko bread crumbs
Oil for frying

-Section out the rings of the onion, keeping them in pairs.

-Take two rings and place the cheese slices in between the two rings. Repeat with remaining rings/cheese. Cover and freeze for about 20 -30 minutes.

-Meanwhile, mix the flour, cornstarch, mustard, garlic, smoked paprika and Red River Ranch Original in a bowl.

-Dip the onion rings in the starter to coat thoroughly, then dredge through the flour mixture. Go back to coat in the starter and end by coating with the Panko crumbs.

-Place enough oil in a Dutch oven or skillet to deep fry the rings. Heat over medium-high heat to 350 degrees F. Fry each side for 2 – 3 minutes or until golden brown. Cool on a wire rack. Serve warm.

GOOGLE Ranked It "Most Popular Pasta Recipes" | HOW TO MAKE ALFREDO SAUCE | Alfredo Pasta
Vincenzos Plate

Published on Mar 11, 2018
Alfredo pasta is the most popular and probably famous pasta in the world. Did you know that in Italy nobody knows what alfredo sauce is? We call it Pasta al burro (pasta with butter) and it's made with butter and parmesan cheese. Alfredo sauce doesn't need any cream or anything else apart from pasta, butter, cheese and water. Alfredo Pasta is the easiest and quickest pasta in the world and it can be made in less then 7 minutes. Enjoy this creamy alfredo sauce recipe and make it for you family. Fettuccine Alfredo.

FRESHEST SEAFOOD FEAST! INSANE Seafood Meal at Dampa Market Manila Philippines
Strictly Dumpling

Published on Mar 11, 2018
When I was in Manila Philippines I was told that I HAD to get some FRESH seafood at a local seafood market called Dampa. At this market, you shop for seafood items like fresh fish, crabs, clams, mussels, lobsters and then take the seafood to a number of local restaurants located nearby so they can prepare it for you in a variety of ways.

We also happened to run into a few very friendly friends from Saudia Arabia and went with them to their hotel for a Salmon and Rice feast. After which we returned to the seafood market, selected some fish, crab, clams, and prawns. We then headed for a restaurant called Hong Kong Master Cook and begin one of the most delicious seafood feasts I've ever had!

The seafood was prepared in many different ways and my favorite was the fish cooked in spicy chili broth. Also, the crab was some of the most tender ones I've ever had. I would highly recommend this seafood market if ever in Manila Philipines.

Irish Bacon Baked Blooming Cabbage

1 head cabbage
1 stick butter, softened
Olive oil
1 cup chicken broth
6 – 8 strips bacon
Red River Ranch Mesquite Seasoning, or your favorite all-purpose blend

-Cut the bottom stem off the cabbage so it sets flat.

-On the opposite side (top of the cabbage) core out a hole about ¾ down the middle of the cabbage.

-With your hands, spread a generous amount of the olive oil over the outside of the cabbage.

-Place the butter inside the hole, and slightly press in to fit.

-Place the cabbage in a deep Dutch oven. Pour the chicken broth in the bottom of the oven.

-Sprinkle the cabbage generously with the mesquite seasoning (or seasoning of your choice).

-Lay the bacon strips evenly on top of the cabbage in a star pattern.

-Cover and bake with coals until tender. Be sure the chicken broth
doesn’t boil out, add more during cooking as needed.

Tip: If baking in the house- cover the dish and cook at 375 for about 40 minutes or until tender.

NIGHT MARKET FOOD in Manila Philippines: BBQ & BLOOD STEW
Strictly Dumpling

Published on Mar 15, 2018
My last night in Manila Philippines and I really wanted to try out one of the local popular night market for some night time eats. One of my local friends suggested Central Mercado a wonderfully vibrant night market in the heart of Manila.

The night market first of all, smelled incredible. From the roasted meat skewers to the refreshing local drinks, there was something for everyone at this night market.

Having filled up on great eats at this night market, I proceeded to a local restaurant that many locals recommended for a taste of Dinuguan which is essentially pork blood stew with organ meat inside.
