Sourdough Bread Recipe with Quick Sourdough Starter

Jalapeno Cheese Sourdough Bread

3 cups sourdough starter (recipe: https://kentrollins.com/?p=405)
1 pkg rapid rise yeast
2 tablespoons sugar
1/3 cup vegetable oil
3 TBSP Baking powder
2 teaspoons salt
2 jalapenos, deveined and diced
1 yellow onion, diced
2 tablespoons minced garlic
3/4 cup shredded pepper jack cheese
3/4 cup shredded sharp cheddar
2 1/2 - 3 cups all purpose flour
Egg Wash
Butter

-Whisk the sourdough starter well, it should be like a slightly thicker pancake batter- adjust the flour or water amount to achieve consistency.

-Whisk together the starter, yeast and sugar. Let set 1 minute.

-Whisk in the oil and salt. Stir in the jalapenos, onion and garlic. Stir in the cheeses.

-Slowly stir in the flour to a soft dough. Turn out onto a floured surface and knead a few minutes until the dough is no longer sticky and holds its shape.

-Divide into 2 loaves and place in buttered loaf pans or in Dutch oven(s) with tinfoil (as shown in video). Let rise in a warm place for about 30 - 40 minutes.

-Brush with an egg wash and cook at 375 degrees F for about 35 - 45 minutes and golden brown and firm to the touch or cook outdoors slowly with light coals.

-Before servings brush with melted butter. Serve warm or at room temperature.

Old Fashioned Peach Cobbler

Filling
2 lbs. Fresh sliced peaches or 2 (15 oz) cans sliced peaches
½ stick butter
¼ cup cornstarch

Crust
¾ cup light brown sugar
1 cup all-purpose flour
¾ cup butter, cubed and chilled

Topping
¼ cup all-purpose flour
½ cup light brown sugar
1 ½ cups old-fashioned oats
1 tsp cinnamon
1 tsp of nutmeg
1 tsp salt
5 tablespoons butter, cubed and chilled
¼ cup maple syrup

Filling
-In a medium pot add the peaches and sugar and ½ stick of butter. Bring to a boil. Set aside.

Crust
-In a mixing bowl, combine the brown sugar and flour. Cut in the butter to a fine crumble. With your hands work th dough to form a moist ball.

-Pat the dough out into the bottom of a buttered In a 12 inch Dutch oven or a 9x13-inch casserole dish. Bake with coals until the dough sets up, or if cooking indoors at 350 degrees F (uncovered) for 15 minutes.

-Return the peaches to the heat and bring back to a boil. Stir in the cornstarch and cook until thickens slightly, stirring frequently.

-Pour the peaches over the crust and drizzle over the maple syrup.

Topping
In a mixing bowl, combine the oats, brown sugar, flour, cinnamon, nutmeg and salt. Cut in the butter until crumbly.

Sprinkle the oatmeal mixture on top of the peaches. Finish cooking with light coals on bottom and heavy on top for about 3-5 minutes and then remove from the bottom heat and finish cooking with the top heat (as seen in video) If cooking indoors return to the oven at 350 degrees F for an additional 25 minutes or until bubbly and the top browns

-Let cool about ten minutes. Serve with ice cream or whipped topping.

In this video we've got a Dutch oven roasted potato recipe. It's full of flavor with our ranch-style twist. We're also sharing some tips on how to cook potatoes in a Dutch oven. This is also a great recipe for beginners.

Dutch Oven Roasted Potatoes

2 tablespoons butter
1 yellow bell pepper,sliced
1 red bell pepper, sliced
1 medium yellow onion, sliced
3 garlic cloves, minced
6 medium red taters, cut into equal bite-sized pieces
1 pound of small round russets
Olive oil
2 ranch seasoning packets
Coarse sea salt, to taste
Coarse ground black pepper, to taste
Grated Parmesan cheese, for sprinkling

- Melt the butter in a cast iron skillet over medium heat. Stir in the sliced peppers and onion. Saute until they begin to get tender and then add the garlic. Continue cooking until the peppers are tender, stirring occasionally.

-In a large bowl, combine the potatoes and pepper mixture. Generously coat with the olive oil (I start with 1/3 - 1/2 cup) and toss to evenly coat.

-Stir in 1 ranch packet to evenly coat, followed by the 2nd packet. Season with the salt and pepper.

-If cooking with a conventional oven, bake at 425 for about 35 minutes, or until tender. About halfway thru cooking, flip the potatoes over.

-Generously sprinkle with Parmesan before serving.

tip: you can use any type of potato combination, just be sure they are all cut roughly the same size for even cooking.

Folks in the video we're showing you how to make the best cheese fries but not just any cheese fries- we're doing them on the grill! You can easily do it in the house too.. just get ready for gooey cheesy goodness!

Crispy Bacon Cheesy Steak Fries

2 (12 oz) NY Strips, Rib eyes or steak of your choice
Fry oil (canola, peanut, etc.)
1 (20 oz) bag crinkle cut French Fries
1 lb. bacon, cut into 2-inch pieces
1 medium yellow onion, chopped
2 jalapenos, sliced in half
8 ounces shredded Mozarella cheese
8 ounces shredded cheddar cheese
8 ounces shredded pepper jack cheese

- Rub the steaks with lime juice and season with Red River Ranch Original seasoning (available here: https://bit.ly/2GuugRTor seasoning of your choice). Place the steaks in a plastic bag and set in icebox for at least 4 hours. Remove about 20 – 30 minutes before grilling.

- Clean, oil and preheat the grill to hot. Grill the steaks about 3 -4 minutes/side. Remove and keep warm. When cool enough to handle, chop into bite-sized pieces.

- Meanwhile, heat the fry oil in a Dutch oven or fryer to about 350 degrees F. Fry the taters, until golden brown and crispy. Let cool on a paper towel or wire rack.

- In the same oil, fry the bacon until crispy followed by the the onions and jalapenos until tender.

- Chop the bacon and jalapenos, set aside.

- Place a layer of the fries on a large baking pan, followed by the cheeses, bacon, jalapenos, onions and steak. Repeat the layers until all the ingredients have been used. We also finished with sprinkling on a little Red River Ranch Mesquite Seasoning (available here: https://bit.ly/2GuugRT - optional)
- Place the pan on the grill over indirect heat and close the lid. Grill for about 5 minutes or until the cheese has all melted.

Note: In a conventional oven, bake at 375 degrees F. for about 5 minutes.

Spicy Tuna Pocket! (Sent in from Hawaii)

In a bowl put two 5 oz. cans of tuna. (drained)
Use the tuna that is packed in water.

Then gently mix in:
2 tbsp. capers
10 sliced green olives (pimento stuffed)
1/4 cup diced sweet onions
The juice from 1/2 lime

1/4 cup cup mayo
1/8 cup sriracha sauce
(You can mix the mayo and sriracha together and add
all or just part of it depending on how wet you want it)

1/8 cup finely chopped cilantro
1/2 tsp. fresh ground pepper
1 tbs. sweet relish (optional)
Mix it all up!

You can make it ahead of time and chill
it in the refrigerator until you are ready to serve.

Stuff Pita bread pockets and serve!

Baked Eggplant Parmesan!

Cut the top off of an eggplant then slice discs
a little under ¼ inch. Salt both sides and put
them in a strainer, cover with a heavy plate
let sit for 1 hour. Rinse with water and blot dry.
(12 eggplant slices total)


In a shallow dish put 3 or 4 eggs beaten. “blender”
Dip the discs in the egg then into Italian bread crumbs.
Put them on a cookie sheet and bake for 10 minutes
on each side at 400 to 425. Turn at 10 minutes because
the bottoms are brown already.

In a 9 X 13 baking dish pour 1/2 of a 24 oz. jar
of marinara sauce. Keep the other 1/2 of the
marinara sauce to put on the eggplants.
Put 6 eggplants in the baking dish and add
marinara sauce on each disc.

Then a layer of fresh mozzarella, and then
a sprinkle of Parmesan cheese and some
fresh basil. Then put another layer of eggplant,
sauce and both cheeses, but no basil.

Bake for 25 minutes at 400 to 425.
You can poke a few thick sliced Roma tomatoes
were ever they might fit! They cook up great.
Garnish with basil, then serve!

World's Best Roast Beef Sandwich! (Homemade Tiger Sauce)

Use the Eye of Round Beef Roast.

Season it with Salt,Pepper, Onion Powder, Garlic Powder.
You can use any seasoning you want... you can also inject
the roast with Beef Stock and seasoning if you wish!

Place a meat probe into the roast at a 45 degree angle
so the tip of the probe is in the middle.

Bake it in the oven at 300 degrees until the internal
temperature is 105 degrees. Remove the roast and let
it rest until the temp rises to it's highest (122-124) and
then starts to go down in temp before you slice it.

You can then cut it in half so it will fit on your meat
slicer or slice it by hand... but slice it very thin!

While the roast is in the oven make your tiger sauce.
1/2 cup mayo
1/2 cup sour cream
2 tbsp. prepared horse radish
1/2 tsp. dry mustard
1/2 tsp. garlic powder
1/2 tsp. chives
1/2 tsp. lemon juice
1/2 tsp. Dijon Mustard
splash of Worcestershire Sauce
pinch of salt and pepper
Mix well and set aside.

Make you Au Jus...
In a pan mix the drippings from the roast and 1 cup of
beef stock and a pinch of flour. Add a slash of red wine
and simmer for 5 minutes. Add: 1/4 cup diced onions
1/4 cup diced celery, and 1/4 cup diced carrots.
Simmer until it reduces by 1/3. Strain out the vegetables
and add a pinch of sugar and at this point ... salt to taste!

Serve the sliced beef on a sub-style bun topped with sliced
onions and your tiger sauce. Give everyone a small dish of
Au Jus for dipping.

For those that don't like it rare simply simmer a portion of
the beef in the Au Jus until it is how they like it!

2” Thick Bone-In Ribye Cook

I had our local meat market cut me some 2” thick Bone-in ribeye steaks for the weekend. They call these cowboy cuts, also Tomahawk steaks but without the long bone.
I don’t have a charcoal grill at Abby’s, but I use her little char-broil gas grill to get it done.
These steaks are absolutely delicious! I cannot ever get a steak at a restaurant as good or as thick as I can cook it myself, so I like to indulge in a nice cut from time to time.
