Easy Camping Breakfast Recipe: Bacon and Ham Waffle Bake


6 slices thick cut bacon, chopped into bite sized pieces
1 stick butter, melted (divided)
5-6 frozen waffles, slightly thawed
6 eggs
¼ cup mayonnaise
1 ½ cups heavy cream (divided)
Salt and pepper, to taste
1 cup diced ham
2 (2.75 oz) packets gravy mix
1 cup water


-Cook the bacon until about half to ¾ done. Place on a paper towel and set aside.

-Pour half of the butter in the bottom of a 12-inch skillet or Dutch oven. Tear the waffles in large pieces and place in the bottom of the skillet/Dutch oven to create a single layer. Pour the remaining butter on top of the waffles. Set aside.

-In a small mixing bowl, whisk together the eggs, mayonnaise and ½ cup of cream. Salt and pepper, to taste.

-Evenly top the waffles with the bacon and ham. Pour the egg mixture over the waffles.

-In a small bowl mix together the gravy packets, water and remaining 1 cup of heavy cream until smooth. Pour over the waffle casserole.

-If cooking indoors, bake at 350 degrees F for about 25 minutes, or until it springs back to the touch and is lightly browned.

Yes. They posted where the bought them by the lb or something. Said they were a great company to deal with. I have looked and looked. I thought it was this spring.

If you have a trader joes near you you might try there. Sometimes whole foods has them as well. Pretty easy just to grow them yourself too.. So much rain this year, mine taste watered down right now. Hopefully the next month is dryer and warm so the remaining figs will ripen properly.

I LOVE seafood and while in Jakarta, everyone was telling me that I MUST try the lobster, crab and fish head curry. I had fish head curry in Singapore and it was pretty good but the fish head curry here in Jakarta was the BEST I've EVER HAD!

The fish was the most tender and succulent and the curry was the perfect blend of spicy and sweet. Also the lobster and pepper crab I had ranks among some of the best seafood I've ever devoured. The place was pricier than most other restaurants in Jakarta but the seafood was DELICIOUS.

I have always said, all you can eat buffets in Asia are far superior than my previous favorite buffet town of Las Vegas. As it stands my favorite all you can eat buffet was at the Hotel Nikko Saigon Seafood Buffet.

But in Jakarta at the Pullman hotel, there is a Sunday brunch buffet that is out of this world! With all you can eat seafood including LOBSTERS cooked the way you want and all this can be had for around $34 which makes this the most value driven brunch buffet I've ever been to.

Smoked Texas Toast Cheeseburger with Chipotle Aioli Sauce

2 (8 oz) ground beef patties (80/20 blend)
Red River Ranch original seasoning
2 jalapenos, cut in half and seeded
2 slices cheddar cheese
2 slices Provolone cheese
2 slices of Swiss cheese
4 sliced Texas Toast sliced bread
2 tablespoons butter, softened
Parmesan cheese for sprinkling
Lettuce, tomato, onion, etc. for serving

Pre-heat, clean and oil the grill. Move the coals to one end of the grill.

Take the patties and mash down just slightly. Be sure your patties extend past the Texas Toast to allow for some shrinkage while grilling.

Season the patties with the Red River Ranch Original seasoning or salt and pepper, to taste.

Place the hamburgers on the indirect heat side of the grill. Add a coupe handful of hickory chips (or wood of your choice) on top of the direct heat (coal) side of the fire.

Shut the lid and smoke for about 3 minutes per side.

Add the jalapenos to the grill (direct heat side) and grill until softened and slightly charred, rotating occasionally.

Move the hamburgers over to the direct heat side, shut the lid and grill for about 2 minutes per side or until medium to slightly medium well done. When lightly pressed, the juice will run clear when done.

Move the hamburgers back to the indirect heat and top with the cheddar cheese, until it melts slightly.

Meanwhile, butter one side of each of the slices of toast and place butter side down on the grill. top one side with the Provolone cheese and the other side with the Swiss cheese.

Grill just until lightly toasted. Top with burger, jalapenos, you favorite toppings and the Special Burger Sauce (below).

Special Burger Sauce - Chipotle Aioli

2 tablespoons mayo
1 teaspoon Worcestershire sauce
1 tablespoon Adobo sauce
½ tablespoon honey
½ teaspoon garlic powder
½ teaspoon smoked paprika
Salt and pepper, to taste

Mix all the ingredients together in a small bowl until smooth. Serve over gilled hamburgers.

Poor Man's Lobster! (Tomahawk Resort Ontario Canada)

In a large pot put 5 or 6 cups of water.

Add 2 tbsp. salt (sea salt or kosher salt)
Add 1 cup of sugar, as you bring it all to a boil
stir from time to time to dissolve the salt and sugar.
Once it reaches a boil add 2 thick slices of lemon and your
Northern Pike or Halibut cut into 1 inch cubes (2 to 3 cups)

Once you add all the fish bring it back to a boil and reduce to
a slow boil for 8 to 10 minutes or until fish cubes pretty much
float to the top. (Do not stir the fish) Remove any foam that is
on top...

Once the fish is done remove the fish and place the pieces on paper towels. Let rest for a minute or two.

Melt 1/2 lb. of salted butter in the microwave or in a sauce pan and
once it is melted skim some of the solids off the top of the butter then add 1/2 tsp. minced garlic and stir well.

Brisket, cooked sous vide for 24 hours then smoked for three on my Yoder YS 640. An easy way to put out some ultra-tender and juicy brisket without having to babysit your pit for hours. Just another technique here, not trying to replace good old low n slow Q!

Katz's Delicatessen New York: Best Pastrami in the World! Pastrami and Fake Orgasms go hand in hand at the most famous delicatessen in the world Katz’s Deli as cameoed in the 1989 romantic comedy When Harry Met Sally. They make a great pastrami sandwich and have built their reputation purely on quality, longevity was inevitable. It's how they prepare it, cure it, cook it and slice it. It was started in 1888 yes more than a century ago as a small deli by the name of Iceland Brothers which was then changed to Iceland and Katz when Willy Katz joined the business in 1903 and then formally Katz’s Delicatessen in 1910 when the Kat’s bought out the Iceland Brothers. Eventually in 1988 without any heirs the remaining family members sold the business to restauranteur Martin Dell and currently his son Jake runs the business. Each day this legendary deli serves as many as 4000 visitors from around the world who get to feast on pastrami, corned beef, brisket on a different level. There are 7 butcher stations so choose the shortest line to get served.

From their menu we highly recommend their Hot Pastrami on Rye and their Reuben sandwich, the servings size is massive and one sandwich could easily fill 2 adults, but it was so damn good and after the long waiting time we each wolfed one down.
