I'm looking for a kitchen set, min 5 up to 10, that includes 6 steak knives.
Looks like $350/$500 OUCH !!!
Sound like you need a better meat source if you need that sharp of knives to cut steaks. :winks2: Skinning and butchering I can see but not in the table settings. :mining: Jus' sayin'

Sound like you need a better meat source if you need that sharp of knives to cut steaks. :winks2: Skinning and butchering I can see but not in the table settings. :mining: Jus' sayin'

Mrs. T. needs a sharp knife for carrots, rutabagas, beets, large squash.......
I need a sharp knife for cutting up roasts, pork or beef into steaks or small pieces for stews or grinding up.
AND for filleting fish.
I just bought a pricey one, we shall see how good it is. Also a combo whetstone.

That is coming from a guy with a two-sided whetstone Course and Fine (on the flip) and two steels a Fine and a Smooth ( ultra fine the edge GERMAN Manufactured).
All I'm missing is a leather strop the old school barbers had hanging on their chairs.

Zwilling J.A. Henckels and

Wüsthof are my 2 favorites. I'm sure that you can spend more money on others but these have NEVER failed me. They work all the time, and hold an edge extremely well. I didn't graduate from Le Cordon Bleu by any means, but I have worked in several professional kitchens, all of them used these or similar quality. Just my .02 cents.

Go with heavy duty German steel as mentioned above. Less maintenance and easier to sharpen. The thin Jap blades can get finicky unless you spend a mint.

from your ideas, I ordered one of those KO electric sharpeners,

that thing worked like a charm for kitchen knives right out of the box,

lickety split done,

much quicker than stoning the things,
and I am not a good enough cook to get all shook about quality of edge
